1 pack of Pea Fritters
500 g frozen peas
A bunch of parsley
A spoonful of sour cream, Greek yoghurt or plant-based yoghurt 1 clove garlic
Lemon juice
Fresh mint
Sun-dried tomatoes

What to do:
Pour boiling water over the frozen peas to cover them. Leave them for 5 minutes, then drain them well. Roughly chop the garlic and parsley. Now put the thawed peas, parsley, sour cream and garlic in a blender (or use a stick blender). Save a small handful of peas for serving.
Blend the rest until you have the desired consistency. Some people like it lightly crushed, while others like it smoother. You know best! Season with lemon, salt and pepper.
Heat up your frying pan with a little oil, and fry your Pea Fritters 2-3 minutes on each side, until they have a nice crust.
Serve the crushed peas with the crisp Pea Fritters, fresh mint, sun-dried tomatoes and whole peas.
