A pack of Falafel Fantastico
200 ml natural yoghurt or plant-based yoghurt
1⁄2 teaspoon salt
1⁄2 teaspoon sugar
1 tablespoons lemon juice
1 tablespoon chopped fresh herbs (broad-leafed parsley, mint, chervil or whatever you like)
1 garlic clove
A tray of cherry tomatoes 2 teaspoons salt
4 teaspoons sugar
4 tablespoons balsamic vinegar 2 tablespoons olive oil
What to do:
Set the fan oven to 120oC. Halve the tomatoes and toss them in salt, sugar, balsamic vinegar and olive oil. Then place the tomatoes in an ovenproof dish and bake them for 2-3 hours, until they are dark red.
Since the tomatoes should cool slightly before serving, you can now go on to your falafels.
Turn the fan oven up to 175oC. When it is hot, place the Falafel Fantastico in the oven.
Mix the ingredients for the dressing.
If you like, this tastes wonderful with a wrap, a naan or similar bread.
