Tzatziki

Rinse the cucumber well and cut off the bottom and top. Cut the cucumber in half and then lengthwise so that you have 4 halves. Remove the insides with a spoon. You can save the insides and use them in a green smoothie or similar.
Rinse the apple, cut it in half and remove the core. Peel the garlic.
Coarsely grate the cucumber and half an apple on a grater. Press or grate the garlic very finely.
Spread the grated vegetables out on a board and dab them with some kitchen paper or a tea towel to remove as much liquid as possible. Once everything is dabbed, combine in a bowl with the basil, parsley and lemon juice.
Mix in the yogurt and season to taste with salt.

- 0.5 apple
- 2 large cloves of garlic
- Fresh basil (a good handful, chopped)
- Fresh parsley (a small handful, chopped)
- Juice from a quarter of a lemon
- 3 dl neutral soy yogurt (e.g. alpro) or Greek yogurt
- 0.5 tsp. salt
