Pickled cucumbers

Bring the sugar, salt, pepper, apple cider vinegar and vinegar to the boil in a saucepan. Meanwhile, thinly slice the cucumber (or whatever shape and thickness you prefer) and place in a bowl.
When the vinegar boils and the sugar has dissolved, pour the liquid over the cucumber slices. Leave to infuse for 2-3 hours before use.
You can also make it the day before.

- 0.5 tsp. salt
- 0.5 tsp. pepper (crushed or peppercorns)
- 4 tbsp. (or about 30 g) apple cider vinegar
- 2 dl vinegar
- 1 cucumber
