Here's how you do it:

Toast the mushroom dumplings in a pan in a little oil until they get a nice crust. Cut slices of bread and let them fry in the pan. While they are frying, chop the fresh tarragon.
When the bread and mushroom dumplings have a nice crust, arrange the food on a plate.

Start by placing the bread in the middle of the plate. Arrange the food first with a layer of mayo on the bread, then two mushroom patties, red cabbage, more mayo, chips and finally sprinkle the freshly chopped tarragon over the food.

Pickled red cabbage
Root vegetable chips or fried Jerusalem artichokes (see recipe here)
