Here's how you do it:

The risotto balls are prepared by deep frying in oil.

Tomato salsa:
Blend all ingredients together and pour through a sieve to remove most of the liquid. Season to taste with lemon, salt and pepper

Optional Mayo:
Blend all ingredients together in a food processor and add lemon to taste, but this is not necessary.

- 400g tomato
- 100g onion
- 50g oil
- 20g fresh coriander
- 20g fresh basil
- 1 lemon
- 2g salt
- 2g pepper

Herbal mayonnaise
- 200g mayonnaise
- 25g parsley
- 10g basil

Mushroom mayonnaise
- 200g mayonnaise
- 10g dried mushrooms
- 1.5 tsp. truffle oil
