Homemade mayonnaise - 3 flavors

Pour all the ingredients and the first dl of oil into a food processor, blender or a regular bowl with your whisk ready at the side. While the ingredients are blending together, add the remaining oil continuously. Let it blend for a few minutes until it becomes a nice, creamy consistency. When the desired consistency is achieved, season with salt, pepper and/or other desired spices. Voila - you have mayo.

Chilli mayo
2 dl soy drink, 2 tsp chili paste
2 tsp salt, 1/2 lemon
2 1/2 dl rapeseed oil
Truffle mayo
2 1/2 dl soy drink, 1 dl truffle oil
2 tsp salt, 1 tsp pepper
1/2 dl lemon, 5dl rapeseed oil
2 tbsp dried mushrooms (can be omitted)
Basil mayo
A handful of basil, 2 garlic
2 tsp salt, 1/2 tsp pepper
1 whole lemon + some zest
5 dl canola oil, 2 dl soy drink
