Here's how you do it:
Rinse the cucumber, cut it into cubes and put the cubes in a bowl.
Cut the tomatoes into chunks, add them to the bowl, sprinkle with 1 tsp salt and mix well. Pour the vegetables into a strainer (you can place it on top of the bowl) and let it sit for at least an hour.
Once it has steeped and released a lot of liquid, pour the cucumber and tomato back into the bowl (pour off the liquid first if you let it steep over the bowl) and add 3 dl alpro yogurt. Chop the mint and add it along with the lemon juice, ground coriander and garlic. Mix everything well together in the bowl.
The riata can be garnished with ground coriander seeds and some fresh mint.
