Here's how you do it:

Add plenty of oil to a frying pan over medium-high heat. Next, add your finely chopped zittauer onion and shallot to the pan. Either finely chop your garlic or use a garlic press and add it to the onion mixture. While it's frying in the pan, get out your food processor and blend your beetroot until it has a 'mince-like' consistency and then pour it into the pan. Repeat the process with the brown mushrooms.
Next, take your walnuts, crush them and sprinkle them over the vegetable mixture in the pan. Do the same with the fresh thyme. Toss everything well in the pan and then put it in a bowl.

After blending the peas in the food processor, add them to the bowl with the large vegetable 'stuffing' and mix well. Next, take your cooked rice and pepper and stir it together. Add the yeast flakes and oats and mix again.

It's better to mix it well and turn it once too much than once too little.

Once the 'stuffing' has been stirred and turned thoroughly, take out your puff pastry and roll it out on the counter. Then put about half of the stuffing on the dough and gently fold the dough around the vegetable stuffing. Repeat the process with your second packet of puff pastry and the last half of the vegetable filling.

Optional step: Cut off a small piece of the puff pastry that you can use to make a pattern on top.

Now put the butter in a saucepan over high heat and melt the butter. Place the two roasts on a baking sheet lined with baking paper and brush them with the melted butter to give them a smooth and golden surface. Finally, sprinkle with sesame seeds and place in the oven at 225 degrees for about 30 minutes. Keep a close eye to make sure they don't get too much color.

Let them cool slightly before cutting them. Arrange on a platter and decorate with fresh thyme and rosemary.
